Day 9 Bonus! - Home-made Iced Tea (or Jelly Juice)

This is my own recipe for Home-Made Iced Tea. It provides a stunningly refreshing drink after a busy day at work, or is perfect to take along on a picnic.

Home-Made Iced Tea

Ingredients:
1.5l Boiling water
2 Rooibos teabags
1 Ceylon teabag
3C Sugar
1 Pkt Jelly Powder, flavour of your choice (I choose strawberry or peach)
15ml Citric acid
2ml Lemon Juice

Method:
1. Simmer 2 Rooibos tea bags in a large pot with 1.5 liters boiling water for 10 minutes.
2. Add the Ceylon tea bag and simmer for another 15 minutes. Remove all the tea bags.
3. Add the sugar, and turn up the heat until it boils. Dissolve.
4. Add the jelly powder and stir until dissolved.
5. Remove from heat, add citric acid and lemon juice.
6. Allow this to cool. Pour the syrup into a 2l bottle.
7. Mix 1 to 3 parts ice water.
8. Enjoy!

Alternate Recipe: Jelly Juice
Make the above recipe but without the Tea bags.

Makes 2 liters of syrup
