Savory Chick Pea Crepes

Finding out that I shouldn't eat Wheat or Dairy has sent me on an interesting journey, to say the least. I thought that my world would collapse without such delicacies such as muffins, breads and pancakes, pies, cakes and biscuits. And to be honest, it did for a while, but in the mean time I have managed to find such lovely alternatives!

These crepes are delicious with a Satay Chicken Filling and Coleslaw salad, or you can make them sweet and top with banana slices, chopped Pecan nuts and a drizzle of honey.

Savory Chick pea Crepes

Ingredients:
1 C Chick Pea flour
1/2 C Potato flour
1/2 tsp Herbal salt
1/2 Tsp Turmeric (optional)
pinch of Cayenne Pepper
1 1/2 C Iced water

Method:
1. Mix the dry ingredients together.
2. Gradually add the water until you have a smooth batter.
Heat a lightly oiled crepe pan on the stove. Spoon enough batter to cover the base of the pan.
3. Cook gently on both sides. It is ready to be turned when the sides of the crepe come off the pan.

Sweet Pancakes:
Replace the salt, turmeric and cayenne pepper with equal amounts of cinnamon sugar.

Serves: 3-4
