Sour Cherry Cake

I thought I'd give this cake a try and I was really impressed!

Sour Cherry Cake

125g Margarine
180ml Sugar
2 Eggs
125ml Ground Almonds
375ml Flour
5ml Baking powder
125ml Milk
680g Jar Morello Cherries

1. Preheat your oven to 180'.
2. Grease a round cake tin.
3. In a mixing bowl, beat the margarine and sugar until pale in colour.
4. Add the eggs, beating well after each addition.
5. Stir in the ground almonds and then add the sifted flour and baking powder. Mix gently.
6. Add the milk and mix again.
7. Gently fold in the drained cherries.
8. Pour into the prepared tin and bake for 50 minutes.
9. Leave to cool in the tin for 10 minutes before turning out to a wire rack to cool.
10. Cut out any shapes or motifs and gently lay these on the cake.
11. Now dust with icing sugar. Gently remove the paper motifs and voila!
12. Serve as is or with ice cream

Makes: 1 Beautiful cake.
