This delicious Mielie bread recipe is so quick and easy to make and has become a regular standby for braai's (BBQ) and picnics on the weekends. I found the recipe in the Sustained Energy for Kids Low GI, low fat recipe book by Gabi Steenkamp, Tanzia Merlin and Jeske Wellmann (Tafelberg) and I have adapted it to be Wheat, Gluten and Dairy Free.
Microwave Mielie (Sweetcorn) Bread (wheat, gluten & dairy free)
Ingredients:
1 dash Paprika, for sprinkling on microwave silicon mold
2 Tbs Gluten free Flour
4 Tbs Sugar
1 tsp Freshly chopped parsley, optional
150 ml Maize meal
100 ml Oat bran (regular oats will do if you don't have oat bran)
1 1/2 tsp Baking powder
1/2 tsp Salt
1 Tbs Canola oil
3 Jumbo Eggs
1/2 C Dairy Free milk (soya, rice etc)
1 can Cream style Sweetcorn
Method:
1. Spray a microwave silicon ring pan with non-stick spray or grease with paper towel dipped in oil.
2. Sprinkle a little paprika into oiled ring pan.
3. Mix all the dry ingredients together in a medium sized mixing bowl.
4. In a separate bowl or shaker, mix the oil, eggs and milk together well and add to dry ingredients.
5. Add the sweetcorn and mix well.
6. Pour into the microwave baking pan and microwave at 80% power for 12 minutes, then at 100% power for 1 minute.
7. Allow 10 minutes for standing time.
8. Turn out, slice and enjoy with a Braai or picnic on the beach!
