Roast Veg Quiche (Wheat, Gluten & Dairy Free)

I made this Quiche today to take with to the girl's ballet concert and loved how simple and easy it is.



Roast Veg Quiche

Ingredients:
850g Vegetables (I used half butternut, half potato), diced
Oil
1 Onion, sliced
Fresh Thyme
6 Eggs
1 C Milk (I used Rice milk)
Salt and Pepper
1 disk goats feta cheese

Method:
1. Parboil the veg on the stove.
2. Drain the veg, put them in a 2l casserole dish and sprinkle with oil and season to taste.
3. Grill/Roast 10 min (keep your eye on it) until corners are crispy and golden.
4. In a frying pan, fry the onion with oil and Thyme until clear and starting to crisp.
5. Remove the veg from the oven, sprinkle the onion on. (preheat the oven so long to 180*)
6. In a jug, beat the 6 eggs and milk with a bit of salt, and pour over the veg.
7. Crumble a disk of feta and sprinkle on top.
8. Put the quiche into the hot oven for 10-15 min.

Delicious!!!
