These flour Tortillas are great for making wraps! They're a bit of work to make, but definitely worth the effort! You can serve them with Savory Mince (with grated cheese, avo and lettuce) or with Thai Chicken strips (and coleslaw, chili sauce and peanut butter!) Mmmm!
Flour Tortillas
Ingredients:
3C Cake flour
2tsp Salt
4tsp Baking powder
1/4C Oil
1 1/4C Cold water
Method:
1. Mix dry ingredients in a bowl.
2. Add the oil and cut in until fine.
3. Add water and mix until like scone consistency.
4. Knead for about 1 minute. (If it's too sticky add a bit of flour)
5. Allow to rise in a plastic bag with air.
6. Place on a floured surface and cut into 12 equal pieces.
7. Roll into a ball, flatten with your palm and then roll flat with a rolling pin until about 20cm in diameter.
8. Cook over medium-high heat in a frying pan sprinkled with FLOUR. (approx. 2 minutes)
9. When bubbles have formed and it's nicely browned underneath, turn them over for another minute.
10. How to make them up: Place a tortilla on your plate, fill the center 1/3 with all your toppings, fold the left side over the topping, and fold the right side over the left. Hold on to it, or it'll pop open!
Serves 6 (2 each)
I see your recipe below is gluten free. Have you ever tried the tortillas gluten free? I am always on teh hunt for gluten free recipes that work and find pastry and tortilla type things the hardest to get right texture wise, always too dry and crumbly!
